Chipotle Salmon + Avo salsa

Chipotle Salmon with Avocado Salsa

As a nutrition student, I can honestly rave all day about the benefits of eating salmon.

Salmon is beneficial for over all body wellness, containing more than one days worth of vitD in just one serving! Salmon also protects your bones and joints as well as increase the efficiency of brain function. Salmon is heart healthy & can benefit your vision, skin, hair, and nails. The omega 3 fatty acids found in salmon fight cancer cells and act as a powerful preventative method. 

You will need:

Salmon

1 large fillet of wild or organic salmon

1 tbsp chipotle seasoning, I like flavor god or frontier

1 tbsp avocado oil

Avocado salsa

1 ripe avocado (cubed)

handful of cherry tomatoes (chopped)

1/2 small red onion (diced)

juice of one lime

Pink salt & pepper to taste

2 garlic cloves (minced)

a few springs cilantro (chopped)

To make:

1. Heat a cast iron over medium heat with avocado oil.

2. Rub salmon with brushed avocado oil + chipotle spice

3. Cook salmon 3 minutes with skin side up, than 3 minutes with skin side down.

4. Mix all salsa ingredients together in a bowl and pile on top of salmon.

5. Double or triple recipe for more servings.
