Wild Mushroom & Herb Pasta

Antioxidants. Antioxidants help protect the body from free radicals that damage our cells and cause  conditions such as heart disease and cancer. Mushrooms also protect the body from aging and they boost the immune system! Especially wild mushrooms. This recipe includes a mixture of maiitake mushrooms, oyster mushrooms, shiitake mushrooms, and cordyceps.

Roasted Wild Mushroom & Herb Pasta.

As a nutritionist I am always looking for healthier pasta alternatives to feed my family, BANZA is my go too for any pasta night. BANZA is made from Chickpeas and is packed with protein + fiber.

You will need: (Serves 4)

1 box BANZA

1 tbsp olive oil

1 tbsp chopped rosemary

1 cup chopped wild mushrooms

1 cup artichoke hearts

1/2 cup chopped tomatoes

Pinch pink salt

1 handful chopped fresh parsley

Juice of one lemon

1. Heat a pot over the stove with boiling water & a pinch of salt. Cook pasta accordingly reserving 1 tsp pasta water upon completion.

2. In the mean time, while the water is boiling roast mushrooms in 1/2 tbsp olive oil + rosemary for 10 minutes at 350 degree F.

3. Once pasta is done fold mushrooms into the pasta mix with pasta water, artichokes, tomatoes, parsley, lemon, pink salt, and other half tbsp olive oil.
