Mexican Quinoa Stuffed Peppers

This Cinco de Mayo lets celebrate with wholesome real ingredients!

Bell peppers contain several phytochemicals and carotenoids, like beta-carotene, which lavish you with antioxidant and anti-inflammatory benefits.

Looking to provide your Cinco de Mayo guests a healthy surprise?! These 6 ingredient plant based stuffed peppers are delicious & easy to make. All you’ll need is a few  wholesome ingredients. Thats it!

You will need:

 1 cup dried quinoa

4 bell peppers

1/2 cup salsa

1 tbsp nutritional yeast

1 tbsp chili powder

1 can black beans rinsed

Cilantro to taste

Lime to taste

To make:

1. Cook quinoa accordingly.

2. Preheat oven to 375 degrees.

3. Halve & clean bell peppers and brush them with avocado or olive oil.

4. Add cooked quinoa to a mixing bowl with salsa, nutritional yeast, chili powder, & black beans. Mix.

5. Bake for 35 minutes.

6. Serve with fresh lime juice & cilantro.
