Caramel Apple Bread
I am so excited to share with you one of my new recipes, Caramel Apple Bread. This recipe is paleo & vegan friendly but it sure does not taste like it. Fall is my favorite season. I love getting creative in the kitchen and turning some of our fall favorites into healthy treats. This apple bread is a perfect example.
I love recipes that make the entire house smell like fall. This is for sure one of them.
Not only is this recipe deliciously healthy but it also is jam packed with nutritious ingredients. It may be gluten and dairy free but its also antioxidant and fiber rich.
Ingredients
For the Bread:
2 cups almond flour
¼ cup coconut flour
2 tsp cinnamon
1/2 tsp nutmeg
1 tsp baking soda
½ tsp pink himalayan salt
1/4 cup unsweetened applesauce
1/4 cup coconut oil melted
¼ cup maple syrup (or honey if not vegan)
3 flax eggs (or eggs if preferred)
1 cup of chopped apples
1/3 cup chopped pecans
For the Caramel:
8 pitted dates
1 tbsp cup melted coconut oil
1/2 tsp pink salt
1/4 tsp vanilla extract
1 tbsp almond butter (optional, makes thicker caramel)
Instructions
Heat the oven to 350 degrees. Line a loaf pan with parchment paper.
In a large bowl, mix together almond flour, coconut flour, salt, cinnamon, nutmeg, and baking soda.
Next, in a smaller bowl, whisk flax eggs (or eggs). Add maple (or honey), applesauce, and melted coconut oil.
Add the wet ingredients into dry ingredients.
Then, fold in apples and pecans.
Using a spatula, place batter inside the loaf pan. Spread evenly over the loaf pan.
Place in the oven, and bake for 40 minutes. You can check with a tooth pick at 35 minutes. Some ovens will vary.
While baking, make your caramel. Add all ingredients of caramel into a food processor and process until caramel is formed.
Once bread is ready, remove from oven and smear with caramel on top. The caramel will start to melt from the heat. Sprinkle pecans on top and slice once cooled.
