Cinnamon Toast Crunch Cereal
Healthy Homemade cinnamon toast crunch cereal! This recipe only uses a few simple ingredients and is grain free, gluten free, and vegan friendly!
Cinnamon toast crunch was my favorite childhood cereal and I wanted to make a healthy version to enjoy with the whole family regarding any dietary restrictions. I love making some in bulk and storing it in a mason jar for about 2-3 weeks.

Ingredients
1 Cup Almond Flour
1/4 Cup Coconut Flour
3/4 Cup + 2 tsp Coconut sugar divided
1/4 tsp Salt
1 1/2 Tbsp Cinnamon
1 Flax Egg
2 Tbsp Coconut oil melted
Directions:
- Preheat oven to 450F
- Make flax seed egg and put to the side (combine 1 tbsp ground flaxseed with 3 tbsp water)
- Add dry ingredients in a bowl, mix well
- Add coconut oil and flaxseed and mix well again forming a sticky dough
- Put dough in between 2 sheets of parchment paper and roll out thin (1/16 inch thick)
- Sprinkle with more cinnamon and bake at 450 for 3-5 minutes depending on your over. Burns fast so make sure to watch it as it bakes!
- Add your favorite plant based milk and enjoy!!
