Superfood Pasta Salad

Its that time of the year again, BBQ season when the sun is shinning & everyones grilling!

Summer can be a difficult time for someone who is trying to eat healthy but also enjoy seasonal food. I follow a plant based diet and have for awhile now. Turning down unhealthy foods is not my problem, its finding something I will eat that I struggle with. So how do I do it? One of my best tips to maintaining my diet while at summer get togethers is to bring my own dish. When I bring my own dish I know I will have someone to enjoy regardless of what else is cooking. My go to’s for summer BBQ’s are either hearty green salads or pasta salads. One of my favorites is a French inspired Superfood Salad w/ Chickpea Pasta.

This superfood salad is full of potent antioxidants and is full of refreshing flavors of herbs de provence. The BANZA pasta provides 25 grams of protein and 13 grams of fiber per serving to keep you feeling fuller longer.

Superfood Pasta Salad 

You will need: (4 servings)

1 box BANZA chickpea pasta

1 zucchini chopped into chunks

1 1/2 tbsp olive oil

1 cup sliced red grapes

1 small lemon juiced + zested

1/4 cup goji berries

1/4 cup chopped brazil nuts

1 handful arugula micro greens (or greens of choice)

2 tbsp herbs de provence spice mix

pink himalayan salt to taste

To make:

1. Set oven to 350 & roast zucchini tossed in 1/2 tbsp olive oil for 10 minutes.

2. Cook BANZA pasta according to box and set aside with 1 tbsp reserved pasta water.

3. Combine remaining ingredients with BANZA.

4. Pink Salt & Pepper to taste.

Serve at room temperature
