Tossed Supefood Salad
Tossed salads are a wonderful way of adding an abundance of nutrient dense foods to your diet.
The great thing about tossed salads are that you can pretty much add any fruits & vegetables that you have in the house. I love striving for an extremely colorful meal full of all different vitamins.

The base I used in this tossed salad was arugula. Arugula is an awesome addition to your diet; it has been shown to decrease the risk of developing specific cancers, lower blood pressure, prevent osteoporosis, decrease the risk of diabetes, enhance athletic performance, and promote energy throughout your day. Arugula has a tangy flavor, therefore I find it best prepared with something sweet. Arugula also helps mineral absorption so eating a large salad full of nutrient dense foods helps absorption. Lastly, Arugula is a great source of antioxidants and can greatly increase a person’s Oxygen radical absorbance capacity, which is a measurement of antioxidant strength.
The salad also features a wide range of different superfoods, antioxidants, and flavors.
It is vegan, gluten free, & paleo friendly.
To make: (serves two)
1 cup halved brussels
1/2 granny smith apple chopped
1 tsp pumpkin spice
1 tsp coconut oil melted (or spray)
2 handfuls arugula
1/2 cup halves cherry tomatoes
1/4 cup golden berries
1/2 cup cooked quinoa
1/2 cup walnuts
1/4 cup hemp hearts
1 tsp nutritional yeast
1 tbsp olive oil
1 tsp apple cider vinegar
Pink salt & Pepper to taste
1. Preheat the oven to 350 degrees & line a baking sheet with parchment paper. Toss granny smith apple in pumpkin spice & pour onto parchment paper along side of brussels. Spray with coconut oil spray or melted coconut oil. Bake for 15 minutes.
2. Meanwhile, in a large mixing bowl, toss arugula with olive oil, apple cider vinegar, salt and pepper to taste, hemp hearts, and nutritional yeast. This is the base of your salad. Add 1/4 cup cooked quinoa, cherry tomatoes, walnuts, & golden berries.
3. When 15 minutes has passed, take out your brussels and apples & add them to the mixing bowl. Toss everything together.
