 Heirloom Tomato & Herb Pasta Salad

Heirloom tomatoes are a high antioxidant food which contain the phytonutrient lycopene closely related to boosting immunity and reducing the risk of cancer. Heirloom tomatoes make the perfect addition to any summer dish.

Vegan? Gluten free? Or just trying to eat healthy? It can be hard in the summer time especially when your the only one trying to focus on your health at a BBQ.

Surprise your guests with this hearty pasta salad at your next get together! Not only will the family love it, but you’ll have something delicious to eat with your health in mind!

You will need:

3-4 Heirloom tomatoes chopped

3-4 cloves garlic diced

1/2 red onion diced

1/4 cup mixed herbs diced; basil, parsley, thyme, oregano, sage

1 box @eatbanza chickpea pasta

1/2 cup chopped walnuts

3 tbsp + 1 tbsp Olive oil

1 zucchini chopped

2 tbsp fresh lemon juice

1 tsp red pepper flakes

Pink hımalayan salt & pepper to taste

To make:

1. Cook pasta according to box and reserve 1 tbsp pasta water.

2. Preheat oven, toss zucchini in 1 tbsp olive oil and roast for 15 minutes.

3. Toss remaining ingredients together.

4. Add zucchini and pasta to the bowl and toss everything together.
