Healthy Apple Crisp

Healthy Apple Crisp 

Tis the season. Pumpkins’ been getting all the credit lately but my recent trip to the orchards sparked some apple creativity. Apple crisp was always one of my favorite fall desserts. I remember my grandma making it every time we went to visit her and we would sit outside on the patio and she’d serve it with ice cream. I wanted to re-create this traditional dessert but in a way I could serve healthier to my family. This recipe is vegan friendly & free of gluten & processed sugars. Here we go… 

You will need:

2 peeled, cored, and sliced lengthwise apples (I used granny smith)

2 Tbsp lemon juice

2 tsp water

3 Tbsp coconut sugar 

1/2 tsp pumpkin spice

2 tsp arrowroot 

2/3 cup rolled oats or ancient grains. I love using Purely Elizabeth brand

2 tbsp coconut sugar  

1/4 cup almond flour

1/4 cup chopped raw pecans or walnuts 

pinch of pink salt

1 tsp cinnamon

1/4 cup coconut oil (mix this with the remaining juices from the apples bowl)

To make:

First, Preheat oven to 350 degrees and find a good 8 x 8 baking sheet. Lightly grease the baking sheet with coconut oil or grass fed butter.

Find to medium bowls. One for the apples, one for the crumble.

For the apples: Mix apples with lemon, water, coconut oil, lemon, arrowroot, pumpkin spice, coconut sugar. Set aside

For the crumble mix remaining ingredients: oats, coconut sugar, almond flour, nuts, pink salt, cinnamon, & remaining juices from the apple bowl.

Bake for 35 minutes at 350 degrees. You can let rest before serving but I like mine hot! I add ice cream and serve right away.
Serve with ice cream, I love to use Nadamoo!
