Chocolate Hazelnut Energy Bites

Healthy little versions of Ferrero Rocher

Chocolate and Hazelnuts are a match made in heaven.

“Chocolate comes from cocoa 

which is a tree…

that makes it a plant…

chocolate is salad”

Close enough right?

I wanted to give my cinnamon toast crunch balls a twist and then this happened.

I substituted cashews for hazelnuts and collagen for cacao and they turned out just perfect.

Curious to get some feedback I brought these babies to work & my co-workers told me they tasted like Healthy little versions of Ferrero Rocher.

To make:

3/4 cup hazelnut butter 

2 tbsp raw honey or 1 tbsp agave

1/2 tsp vanilla extract

2/3 cup hazelnuts or almonds 

3 tbsp cacao powder 

2/3 cup almond or millet flour

Pinch pink himalayan salt 

Crushed hazelnuts for rolling 

1. Combine all ingredients in a food processor.

2. Roll into balls, than in crushed hazelnuts. 

3. Place on parchment paper and refrigerate at least two hours to form.

4. Store in fridge or freezer for longer storage.
