BBQ Ranch Chickpea Chopped Salad
The weather is getting warmer & this new recipe is making me so excited for BBQ season! It’s a delicious plant based salad you can bring with you as a dish to any BBQ or prepare for your guests. The best part is that it only takes about 15-20 minutes to make. With an abundance of colors this delicious salad will not only wow your guests taste buds but it is super inviting and nutritious.
Ingredients:
Romaine Lettuce
1 Jar Jovial Chickpeas rinsed, drained, dried
1 tbsp extra virgin olive oil
salt & pepper to taste
1 cup yellow bell pepper chopped
1 cup rainbow carrots chopped
1/4 cup chopped scallions
1/4 red onion sliced
3 tbsp hemp seeds
1 avocado chopped
1/4 cup Primal Kitchen BBQ Ranch Salad Dressing
Directions:
Heat oven to 350 & toss jovial chickpeas (rinsed and dried) in olive oil, salt, and pepper and place over parchment paper to roast in the oven for 15 minutes.
While chickpeas are toasting/roasting, prepare the other ingredients.
Toss everything together and add dressing prior to serving
