Family Style Vegetarian Quesadillas
An easy gluten free, dairy free, and vegan recipe featuring @sietefoods products
As a clinical nutritionist I am always looking for products to recommend to my patients that allow them to eat the foods they love, but also allow them to indulge in family favorites. You will need:
2 siete foods tortillas (per person)
1 jar Siete foods queso dip (varies per serving)
Siete foods hot sauce (varies per serving)
Your favorite Guacamole
lime (topping)
cilantro (topping)
Veggie filling ingredient may vary (I use what is in the house. You can follow my recommendations below or use any other veggies you have) :
1 chopped bell pepper
1 chopped zucchini
1/2 red onion minced
3 garlic cloves minced
1 tbsp avocado oil
2 portobello mushrooms
1 tbsp taco seasoning
To make:
In a stock pot heat avocado oil.
Saute onion & garlic until translucent
Add remaining veggie filling ingredients: zucchini, bell pepper, mushrooms. taco seasoning, and sauce until soft. Turn the heat off and let it cool slightly.
Meanwhile, heat 2 siete food tortillas.
Add a few tbsp of Siete foods queso dip to a tortilla, then add veggie filling & cover with another tortilla.
Bake or grill quesadillas until crisp.
Top with guacamole, lime, or Siete foods hot sauce.
