Blueberry Muffin Energy Bites
A simple recipe that is perfect for a quick breakfast, snack, or bite size dessert on the go.
I’m the type of girl whose always wanting to snack on something and these make snack time fun and exciting. Just gather a few ingredients, put them in a food processor, roll them into balls, and put in the refrigerator for a half hour… that’s it!
(Makes about 16-20 energy bites)
3/4 cup cashew butter
2 tbsp raw honey or 1 tbsp agave
1/2 tsp vanilla extract
2/3 cup pecans
2/3 cup almond flour
1 tsp cinnamon
1/2 cup dried wild blueberries (no sweetener added)
1. Add pecans to food processor and pulse. Then add remanning ingredients & combine all ingredients in a food processor.
2. Roll into balls, then in cinnamon or leave as is.
3. Place on parchment paper and refrigerate at least two hours to form.
4. Store in fridge or freezer for longer storage.
