Summer Watermelon Salad

   This refreshing watermelon salad is perfect for any BBQ. It’s quick and easy to make + most of the ingredients can be grabbed right from your garden. This recipe took under 10 minutes to make & the clean up was minimal. This recipe serves about 4 people, double or triple the recipe is making it for a BBQ.

Whats better than a refreshing watermelon salad?! eating it right out of a watermelon DUH!

Watermelon has a high amount of lycopene, a nutrient responsible for fighting free radical damage. Some benefits of eating watermelon include:

A boost in immunity 

Improves heart health 

Speeds recovery from muscle soreness

Prevents kidney stones

Detoxifies the body 

Helps fight or prevent cancer

Boosts eye health

Weight loss

Helps acid reflux

You will need:

1 mini organic watermelons (about 8 cups, balled)

6 chives chopped

1/4 cup fresh mint

1/4 cup balsamic vinegar

1/4 cup avocado or olive oil

pink himalayan salt to taste

cracked black pepper to taste

1/4 cup pistachios

1 cucumber, sliced and halved.

To make:

1. Use a melon baller to make watermelon balls, set aside.

2. Scrap out remainder of watermelon to make a bowl.

3. Chop chives, mint, and cucumbers + add them to the bowl with watermelon.

4. Toss ingredients together with oil, vinegar, salt, pepper, and pistachios.
