Cinnamon Toast Crunch Energy Bites

YES Cinnamon toast crunch! You heard right!

Growing up as a child cinnamon toast crunch was my absolute favorite thing to eat in the morning for breakfast! I’ve always had a weak spot for cinnamon, which gave me the idea to recreate it in an energy bite! Eat them for breakfast, take them on the go, or have them for dessert!

(Makes about 18-20 energy bites)

3/4 cup cashew butter

2-3 tbsp raw honey or one maple syrup

1/2 tsp vanilla extract

2/3 cup pecans

3-4 scoops vitalproteins marie collagen

2/3 cup almond or millet flour

2 tsp cinnamon (+ more for rolling at end)

1. Combine all ingredients in a food processor.

2. Roll into balls, than in cinnamon.

3. Place on parchment paper and refrigerate at least two hours to form.

4. Store in fridge or freezer for longer storage.

The cashew butter makes it super creamy… and the raw honey and cinnamon super sweet!
