Pasta Alla Puttanesca
Pasta Alla puttanesca is an Italian pasta dish that was invented in Naples. Its ingredients typically include tomatoes, olive oil, olives, capers and garlic. Who doesn’t love Italian? Italian dishes are comforting, flavorful, and when made the right way… highly nutritious. My take on pasta alla puttanesca is gluten free, vegan, and entirely homemade.
Cooking time approximately 30 minutes.
You will need:
Chickpea pasta or gluten free alternative + 1 tbsp reserved pasta water
Pink himalayan salt to taste
1 tsp crushed red pepper flakes
4-5 cloves garlic minced
1 tbsp olive oil
1/4 cup capers
A few olives to taste
4-5 Roma tomatoes processed in a food processor
To make:
Boil water salted with pink himalayan salt.
Heat a cast iron skillet with olive oil.
Once hot, lightly sauté garlic & red pepper flakes.
Add in tomatoes & Stir.
Add in 1 tbsp pasta water.
Add in chopped olives & capers.
Salt & pepper to taste.
Serve with fresh Parsley or alternative herb.
