Mediterranean Pasta with Brussels, & figs.

This mediterranean inspired pasta dish is full of heart healthy, nourishing, anti-inflammatory ingredients.

From the vibrant colors to comforting taste… this meal is perfect in so many ways & can be prepared in less than 20 minutes.

You will need: (2 servings)

1 cup dry chickpea pasta [or pasta of choice]

1 handful brussels, halved

handful cherry tomatoes, halved

3 garlic cloves, sliced

1/2 red onion, sliced

6 kalamata olives, sliced

handful fresh herb blend chopped [parsley, basil, mint]

1/4 cup chopped dried figs

2 tbsp olive oil

1 tbsp lemon juice

1 tsp crushed red pepper flakes

1. Preheat oven to 350, line a baking sheet with parchment paper. Toss brussels, tomatoes, garlic, and onion in 1 tbsp of olive oil + salt and pepper to taste and transfer to baking sheet. Roast for 15 minutes.

2. Cook pasta accordingly, drain & reserve 1 tbsp pasta water.

3. Add to pasta: pasta water, lemon, other tbsp olive oil, fresh herbs, olives, crushed red pepper flakes & figs.

4. By this time, the veggies will be done roasting, toss in remaining ingredients & serve warm.

There is so much flavor happening in this dish, every mouthful is uniquely wonderful.
