Sometimes you need a smoothie bowl that resembles a chocolate chip cookie
But in all seriousness this creamy COOKIE DOUGH smoothie is the real MVP. I love getting creative in the kitchen, especially when it comes to smoothies. Smoothies are a great opportunity to sneak in those extra veggies in a way that tastes delicious. Working with a lot of kids in clinical practice I feel it challenges my creativity to make smoothie recipes outside the box… this recipe is one of them. It hides streamed then frozen riced cauliflower in it which has tones of fiber, vitamin C, and choline, and antioxidants essential for optimal health. What I love so much about this smoothie for kids specifically is that they will develop a taste for cauliflower from it being hidden so when introduced in a balanced meal they are more likely to like the flavor.
Here’s how to make my cookie dough recipe…
- 1 cup steamed then frozen cauliflower
- 1 medium frozen banana
- 1/2 tsp vanilla extract
- 1 tsp cashew butter
- 1 packet frozen coconut
- 1/4 cup plant based milk
- Optional: plant based vanilla protein
Add everything to a blender and blend until smooth… Then top with my edible cookie dough!
Tips to make it super thick:
- Use less milk, splash it as your smoothie blends
- Chop cauliflower, banana, and coconut small before adding to blender
