Chocolate Covered Strawberries

You often hear about how chocolate and peanut butter are a match made in heaven but for me its chocolate and strawberries. These are sweet treats that I find myself making year round, and not just when Valentines day comes around where they are more popular. I love dunking them into different super food toppings to give them more texture and creativity.

Pistachios, peanuts, walnuts, pecans, coconut flakes, goji berries, you name it. The possibilities sure are endless to the combinations you can create. 

And I love Strawberries! They are bright red, juicy, sweet and loaded with antioxidants. They are also an excellent source of vitamin C and manganese and also contain decent amounts of folate (vitamin B9) and potassium.

For the chocolate base I love using HU chocolate which has no sugar alcohols, no refined sugars, no cane sugar, no palm oil, no dairy, no soy lecithin, or emulsifiers. I know right… So what does it have? Real whole food ingredients like Organic cacao, unrefined organic coconut sugar, &organic fair-trade cocoa butter.

The secret to this recipe is to use a “carrier”… it makes the chocolate go a long way, which I’ll explain more in detail below in the recipe instructions. The carrier I use is a small amount of Navitas Organics cacao butter.

Let’s do it. 

You will need:

1 package of organic strawberries

1 HU dark chocolate bar or 1-2 handfuls of HU gems

1/8-1/4 cup melted cacao butter

Optional: Any fun toppings like crushed nuts, coconut flakes, or nut butter to drizzle 

Tools:

Double boiler set up or chocolate melter

Parchment paper

Platter / plate

Directions:

Prepare strawberries: rinse and dry the strawberries before dipping in chocolate. It is best to dip the strawberries when they are cold so the chocolate hardens faster.

Prepare chocolate by melting HU chocolate bar & cacao butter over a double boiler, stirring constantly so the chocolate does not stick. The cacao butter helps a lot.

Dip the strawberries in the chocolate mix, and place them over a plate lined with parchment paper and refrigerate for 5 minutes. Do this again with a 2nd layer but this time before put the chocolate dipped strawberries in the fridge to harden the chocolate, sprinkle on some of the toppings or dip the strawberries in the toppings… then put them in the fridge to form.

One they have hardened, Enjoy!
