Super Food Salad
A super food is a nutrient-rich food considered to be especially beneficial for health and well-being. When incorporated into a well-balanced diet, these foods can promote over all health and well being. They are promote heart health, anti aging, reduce free radicals, support healthy blood pressure and much more. Super foods are those that are nutrient dense, high in micronutrients: minerals, vitamins, and phytonutrients.
As the weather starts to get warmer, I love to challenge myself to get in one raw salad per day. This ensures that I am boosting my micronutrients and increasing superfoods on a daily basis to support optimal health. Salads are the perfect way to do so because of the variety of colors you can add to it. Each color carries its unique range of micronutrients which is why it is important to try to get a combination of many.
In this recipe, and in many of the salads I create, I try to shoot for 3 colors or more.
The superfoods present in this recipe:
Kale [green: cruciferous, detoxifying]
Pomegranates [red: amazing for oxidizing LDL]
Celery [green: amazing for lowering blood pressure]
Carrots [orange: rich in vitamin A & C]
Hemp Seeds [plant based complete protein, omega 3’s]
Pistachios [antioxidants, vitamin B1 & B6]
Lemon Turmeric [alkalizing, antioxidants]
To make: (serves 3)
Toss a few handfuls of kale in lemon turmeric dressing (@primalkitchen). Enough to coat evenly about 1-2 tbsp
Add remaining ingredients.
No measurements with the fruits and veggies.
1 tbsp hemp seeds per serving
1/4 cup pistachios per serving
