Snickerdoodle Bites
My favorite cookies growing up were for sure snickerdoodles.
That smell of cinnamon sugar coming from the kitchen and I knew.
As I started this health journey, one of my biggest passions was re- creating sweet and savory treats that I loved from childhood to show others that its possible to follow a real whole foods diet and still eat the foods we love. And I don’t know how I waited this long to recreate the snickerdoodle!
The best part of this recipe is that it is “raw” which means it does not have to bake and can be made in literally only 10 minutes! All you need is a handful of ingredients and a food processor. Additionally, this recipe is full of healthy fats, plant rich protein, and fiber making it the ideal snack, dessert, or even grab and go breakfast. Thats right, snicker doodles for breakfast.

So gather up your ingredients and lets get going!
Ingredients
3/4 cup cashew butter
5 tbsp raw honey or maple
1/2 tsp vanilla extract
2/3 cup pecans
2/3 cup almond flour
2 tsp cinnamon (+ more for rolling at end)
1 tsp coconut sugar (+more for rolling at the end)
Direction
Add pecans to a food processor and pulse. Next, add the following ingredients and mix again until fully combined. Roll into balls and then in a 2:1 ratio of cinnamon and ground coconut sugar and place in the fridge to form. Let sit for about an hour before eating. Freeze for longer use.
