Roasted Vegetable Mache Rossette

 

Roasted Vegetable Mache Rosettes Salad

Mache is one of the most delicate kind of greens. It forms a loose and wavy rosette and has a fresh nutty flavor. Mache Rosettes are a great addition to a hearty salad, great source of omega 3 and vitamin C.

 

You will need:

-Olive oil spray

-3 fingerling potatoes sliced

-1 cup sliced fennel

-4 brussel sprouts halved

-Handful cherry tomatoes halved

-2 handfuls mache rossetes

-1/4 cup pistachios

-Pink salt & pepper to taste

-1 tbsp olive oil

-2 tsp red wine vinegar

To make:

1. Preheat oven to 350 degrees F & line a baking sheet with parchment paper.

2. Spread potatoes, fennel, & brussels on the baking sheet, lightly spray with olive oil spray, and sprinkle with pink salt and pepper. Bake 25 minutes tossing once in between.

3. In a large bowl toss mache rossetes in olive oil & vinegar. Top with roasted vegetables, cherry tomatoes, & pistachios.
