Roasted Red Pepper Pasta Sauce
Organic Red Bell Peppers are currently on sale at my local whole foods and you best believe I am taking advantage of it! Don’t let their color fool you… red bell peppers are a great source of folate and vitamin B6 which both help to prevent anemia, support healthy sleep, and production of specific neurotransmitters. Red bell peppers also help to boost your immune system due to high vitamin A, C and antioxidant properties, including beta carotene, which helps maintain healthy skin and vision. So why not make them into a delicious pasta sauce?
I had to start getting creative with vegetables when I started working as an integrative nutritionist, especially working with kids. It’s very hard to get kids to eat their vegetables nowadays because let’s be real, they want all the junk with the good commercials.
So let’s get to it.
What you’ll need equipment wise is a good knife, baking tray, pasta pot, & a good blender.
Gather your ingredients:
2 tbsp avocado oil or other high heat oil
2 bell peppers, sliced in half & seeded
1 small bulb of garlic, I like it garlicky – use-less if not a garlic person
Pink Himalayan salt & black pepper to taste
2 tbsp Italian seasoning mix, I like a simple organic blend
2 cups jarred pureed organic tomatoes
1 handful of fresh chopped basil
To make:
- Preheat oven to 350, place red bell peppers, garlic, and onion, over parchment paper & coat with oil — bake for about 20 minutes until peppers are charred.
- In the meantime, boil water & cook your pasta. My pasta of choice is BANZA chickpea pasta but you can use any favorite gluten-free brand.
- When vegetables are roasted, transfer them to a blender (Vitamix) with the other tbsp of oil, Italian seasoning, basil (save some for topping), pured organic tomatoes, salt, and pepper. BLEND.
- Pour some of the sauce over the cooked pasta with 1/2 tsp reserved pasta water for extra flavor.
- Sprinkle that with fresh basil & your veggie-packed pasta dish is complete! Oh yeah!
