Pumpkin Spice Energy Bites!
Pumpkin Spice Energy Bites (Optional Chocolate Bath… do it!)
These bites are only 5 ingredients and take minutes to make! They are super high in minerals, vitamins, and fiber making the perfect go-to afternoon snack or after-dinner dessert. They are gluten-free, paleo-friendly, vegan-friendly, refined sugar-free, whole30friendly, you name it.

Ingredients:
10 pitted dates
1/2 cup coconut flour
1/2 cup pumpkin puree (not pumpkin pie filling)
1 tsp pumpkin spice
1 pinch sea salt
Directions:
Add dates to a food processor and pulse until it makes a sticky consistency
Add remaining ingredients. The outcome should be slightly sticky and easy to roll. If too sticky add a tiny bit more flour… if to dry add a tiny bit more pumpkin.
Roll into balls (makes about 10 bites)
Freeze for 10 minutes and store in the freezer (for long use) or fridge for about 1.5 weeks.
Optional: After freezing for 10 minutes, dip half the bites in chocolate & freeze again
