        Pumpkin Cinnamon Spice Bars

These pumpkin cinnamon spice bars are so delicious!

These bites are perfect little snacks or desserts during the fall & holiday season. Made with a baked cookie base and creamy pumpkin icing, these treats can be stored in the fridge for perfect consistency or in the freezer for more of an icecream consistency.

 

 

Base
1/4 cup nut butter
1/2 cup almond flour
3 tbsp maple syrup
1 tsp cinnamon
1/2 tsp nutmeg
1/4 tsp ginger

Filling
1 cup pumpkin pure
1/2 cup nut butter
1/4 cup coconut oil or cacao butter melted
1/2 cup maple syrup
1/2 tsp cinnamon
1 tsp vanilla
1/4 tsp salt

Base:
Preheat oven to 350 Mix all ingredients until combined, cover a 6×6 baking pan with parchment paper and use a rubber spatula to smear evenly as the base. You can also use another sheet of parchment paper, cover, and push with your hands to pat down evenly if dough is too sticky. Bake for 13 minutes and let cool 10-15 minutes.

Filling:

Meanwhile, prepare filling. Melt coconut oil in a pan over the stovetop over low heat. Once melted, add other ingredients and stir continuously until completely combined over low heat. Remove from heat and let cool 10-15 minutes alongside of the crust. Add tough to crust and freeze for 30 minutes.
