Ferrero Rocher Holiday Cookies
Ever wonder what would happen if a Ferrero Rocher candy turned into a cookie? These are the things I think about when I start creating recipes. I saw a holiday commercial for Ferrero Rocher and decided to bring my own twist in a chocolate chip cookie recipe. They are rich, chocolatey, and oh so delicious!

You will need:
Wet
1/4 cup hazelnut butter (I used Artisana hazelnut cacao spread)
1/4 cup ghee (I used forth and heart vanilla bean)
1/3 cup agave nectar or maple syrup
1 tsp pure vanilla extract
Dry
1/2 cup almond flour (fine)
1/2 cup hazelnut flour
1/4 cup coconut flour
1/2 tsp salt
1/2 tsp baking soda
Other
1/4-1/2 cup HU GEMS
If you use plain hazelnut butter, I recommend adding 1 tbsp cacao powder too the dry ingredients
To Make:
Preheat oven to 350 degrees F
Mix Wet and dry ingredients in separate bowls.
Next, Mix dry into wet and mix together again until completely mixed and no clumps.
Add chocolate chips or Hu Gems
Place dough in the freezer for 10 minutes then use hands to roll into 12-16 round balls.
Place balls on a cookie sheet about an inch apart and flatten or use your hands to form into cookies. These cookies will flatten when cooking so don’t flatten too much.
Bake for 12-15 minutes (ovens may vary) check if its done by sticking a tooth pick into the center of the cookie, if nothing comes out on the tooth pick its done.
Let cool for 5 minutes and remove from pan to a cookie cooling rack.
