Easy One Pot Veggie Curry
You work full time, maybe even go to school full time and it’s hard to find easy dinners to make on the fly or to prepare for the week ahead. This super easy veggie curry only requires one pot & a cutting board so minimal cleanup!
Make this easy & nutritious meal in bulk and use as meals for the next two or three days.
You will need:
Vegetables may vary. You can use whatever vegetables you have in the house.
1 tbsp coconut oil
1/2 red onion minced
1 chopped zucchini
1 chopped carrot
1 chopped bell pepper
2 tbsp curry powder + 1 tsp extra turmeric
1 cup pured tomatoes
1/2 cup full fat coconut milk
1 cup chopped Swiss chard
Fresh cilantro & Salt and pepper to taste
To make:
In a stock pot or dutch oven heat some coconut oil.
Add minced red onion and saute until fragrant
Add remaining vegetables, curry powder, tomatoes, and coconut milk.
Put the lid on, let the flavors marry.
Add the swiss chard and let the heat wilt the greens.
Season with salt and pepper, Top with fresh cilantro and serve with rice.
