Cranberry Cashew Energy Bites
The perfect seasonal bites for a healthy snack, on the go breakfast, or sweet dessert!
I absolutely love making energy bites and storing them in the freezer for when I need a quick bite between meals or a sweet treat. They can be made in minutes by combining all the ingredients in a food processor and then rolling into bite-size balls. When making energy bites, I try to fill them with fiber, healthy fats, and protein to balance blood sugar and keep me feeling satisfied longer. This recipe has all of that + many seasonal flavors to hit all those sweet tastebuds.

3/4 cup cashew butter (I recommend Artisana for this recipe or one with cashews as the only ingredient)
2 tbsp raw honey or 1 tbsp maple syrup (syrup is runnier so less is needed)
1/2 tsp vanilla extract
2/3 cup pecans
2/3 cup almond or millet flour
1 tsp cinnamon
1/2 tsp nutmeg
1/4 cup dried unsweetened cranberries
Optional: 1-2 scoops Collagen
1. Combine all ingredients in a food processor except cranberries. Add cranberries and pulse again a few times.
2. Roll into balls. If balls are too wet, add more almond flour, if too dry a bit more nut butter. Consistency may vary depending on the cashew butter you use.
3. Place on parchment paper and refrigerate at least two hours to form.
4. Store in fridge or freezer for longer storage.
The cashew butter makes it super creamy!
