Cookie Monster Smoothie

Cookie Monster Smoothie

 

This smoothie makes me feel like a kid again!  A pediatric patient of mine inspired me to make this smoothie when I was challenged to find a way to sneak veggies into their diet. I’ve come to the conclusion that in order to do that, we just have to put our feet in their shoes and think like a kid.

This smoothie is super fun, immune boosting, and delicious! I used my typical blue smoothie base with hidden cauliflower + added a spoonful of cashew butter for a cookie like taste. The smoothie is topped with @simplemills cookies for a fun crunch & healthier alternative to your typical chocolate chip cookie!

 

You will need:

1 frozen banana

1/4 cup frozen riced cauliflower

1 scoop vanilla plant based protein

1 tsp @unicornsuperfoods blue spirulina

1 tbsp cashew butter

1 splash or two of cashew milk

Topping: Crushed simple mills chocolate chip cookies (1-2) 

 

To make: 

Add all ingredients to a high speed blender and blend until smooth.

Top with crushed cookies!
