Banana Bread Energy Bites
I am always looking for a new energy bite recipe & who doesn’t love banana bread!
Energy bites are one of my favorite things in the world to make. I love making them in bulk and leaving them in the freezer for longer storage because I can defrost them in the fridge whenever I want to have them ready on the go. Energy bites are full of protein and healthy fats to keep you satisfied until your next meal. The slight sweetness from the honey and banana is balanced with protein and fat to stop your blood sugar from spiking and allowing it to stay more balanced in between meals.
Heres how they are done:
3/4 cup Almond or cashew Butter
2-3 tbsp mashed banana
1 tbsp raw honey
1/2 tsp vanilla extract
2/3 cup pecans or walnuts
2/3 cup almond flour
1 tsp cinnamon + 1/2 tsp nutmeg
For rolling at the end: 1 tsp cinnamon + 1 tsp coconut sugar
1. Combine all ingredients in a food processor.
2. Roll into balls, than in cinnamon + coconut sugar mixture.
3. Place on parchment paper and refrigerate at least two hours to form.
4. Store in fridge or freezer for longer storage.
