Summer Detox Salad 

 

This salad was inspired by a recent trip to the farmers market. One of my favorite parts of summer is my weekly trips to the market. It’s bittersweet because a much as I love the summer markets… my favorite season is fall.  I love going to the market feeling open minded and without a list. Sometimes the best recipes come accidentally and todays trip to the farmers market was started off as a blank canvas for me.

I found some asparagus, figs, watermelon radishes, & cherry tomatoes.  Sounded perfect for a salad recipe. With labor day weekend approaching, I wanted to put together a quick and easy salad recipe for the weekend BBQ’s.

I lightly roasted the asparagus in avocado oil & sea salt for only 5 minutes while I sliced up the rest of the produce.

Sliced figs, sliced cherry tomatoes, sliced watermelon radishes.

All over a bed of local spring greens. 

This recipe is a delicious and refreshing treat on a hot summer day but also jam packed with nutrients and detox properties.

Watermelon Radish: Radishes Aid in digestion and are full of dietary fibre, which helps with digestion and keeps you regular.

Figs: Figs are a good source of nutrition, including vitamins B6, K and E. They are high in fiber and can help keep your bowels regular.

Asparagus: Asparagus can act as a natural diuretic. It helps flush out toxins in kidneys and prevent kidney stones.

Cherry Tomatoes: Tomatoes help clear the system of the overload of waste products and toxins that build up in the liver, intestines and elsewhere.

Spring Greens+ Spinach: Spinach helps to lower damaging protein levels in the blood and can protect against high blood pressure and heart disease.

Walnuts: Walnuts are high in the amino acid arginine and assist the liver in detoxifying ammonia. They’re also high in glutathione and omega-3 fatty acids, which all provide support to natural liver cleansing.

Turmeric-lemon Dressing: Lemon helps your digestion, flushes out toxins and cleanses the liver + Turmeric is an antioxidant powerhouse.

 

 

 

To make the salad:  (Serves about 5)

Lightly roast 1 bunch of asparagus in avocado oil & sea salt.

You will also need:

a few handfuls of spring mix + spinach, or greens of choice.

1 handful sliced cherry tomatoes

1 sliced watermelon radish, can cube.

1 /2 cup chopped walnut pieces

primal kitchen turmeric-lemon dressing

 

Directions:

Toss all ingredients together and add dressing when ready to serve.
