Greek Salad
One thing I love about the summer time is enjoying fresh salads on the porch. Salads are so refreshing. When we think of hydration we often forget how much water content is in fruits and vegetables. It is so important to drink enough water throughout the day but fruits and vegetables are a great way to sneak them in. This greek salad is full of hydrating fruit & vegetables like cucumber, leafy greens, and tomato.
Yes, tomato is technically considered a fruit… did I catch you there?
This salad is perfect enjoyed as a light lunch or dinner, but you can also top it with your favorite protein source like wild caught salmon or grilled shrimp.
Ingredients: (For a single serving, double if more)
1 handful of Kale
2-3 tbsp Hemp Seeds
1/4 chopped Red Onion
1 small chopped mini Cucumber
5-6 chopped Mini Heirloom Tomatoes
3-4 chopped Green Olives
1/2 small Avocado
Kale Marinate: (1 tbsp Olive oil, 1/2 tbsp Red wine vinegar, 1/2 tsp Italian seasoning, pinch of Sea Salt, pinch of Black pepper)
Directions:
1. Toss kale in kale marinate + hemp seeds. I recommend washing your hands and using them to toss the kale. This softens the kale and makes it easier for you to digest and breakdown the raw green.
2. Add remaining ingredients to a bowl & toss together.
