Italian Herb Pasta
This recipe is featuring BANZA pasta. Banza is pasta made from chickpeas!
As a new Banza ambassador I have been asked to take the BANZA FIVE ingredient recipe challenge. The challenge was to create a dish using Banza and only five other ingredients.

The other ingredients:
1 box BANZA (reserve 1 tbsp pasta water after cooking)
1 Fennel bulb sliced, save fennel tips.
2 cups sliced Brussel sprouts
2 Lemons, juiced and zested
3 tbsp Olive oil
2 tbsp Herbs of Italy seasoning mix.
1. To make this pasta, preheat oven to 350 degrees, line a baking sheet with parchment paper. Toss fennel and brussel sprouts in 1 tbsp olive oil and roast for 30 minutes.
2. Heat a pot over the stove with filtered water until boiling. Add pasta and cook accordingly, saving 1-2 tbsp pasta water for additional flavoring.
3. Toss fennel, brussel sprouts, pasta, remaining olive oil, lemon juice & zest, and fennel tips together in a bowl.
4. Add herbs of Italy seasoning mix serve warm or cold.
