Vegan Chocolate Chip Cookies

Its that time of the year again…

That time where there is nothing better than putting that oven to work and

baking your favorite holiday cookie recipes… 

Yeah, that time!

I’ve put together one of my favorite almond flour vegan cookies just in time for the holidays.

I don’t know about you guys but this time of year I am secretly a cookie monster. I am always looking for healthier alternatives during the holiday season to satisfy my sweet tooth.

So if you are a cookie monster, you are not alone!

This recipe is simple, delicious, and you only need one bowl to toss everything together.

But really does it get any better than this?!

You will need:

1 chia egg (1 tbsp ground chia & 3 tbsp filtered water)

1/4 cup liquid coconut oil (melted and cooled)

1 tsp vanilla extract

1/2 cup raw maple syrup

2 tsp baking powder

1 1/4 cup gluten free flour (I used almond)

2 tbsp coconut flour

1/2 cup chopped chocolate bar (I used eating evolved dark)

To make:

Preheat the oven to 350 degrees

Mix wet ingredient – chia egg, vanilla, maple, and coconut oil. [mix well]

Next, fold in dry ingredients. [mix well]

Use a tbsp to spoon out 2 tbsp, roll into a ball with hands and flatten into thick cookies.

Place cookies on a baking sheet. [greased]

Bake for 10 minutes.

Store in an airtight container or cookie jar for 5 days
