Mediterranean Roasted Sweet Potatoes in Garlic-herb Sauce

This Mediterranean inspired dish is a nutritional power house.

Roasted havana sweet potatoes, layered with roasted harissa chickpeas, topped in fresh herbs & fresh tomatoes drizzled with garlic herb sauce.

Sweet potatoes are a great base to any meal. Here I chose havana sweet potatoes which provide the same benefits with a slightly softer skin. Sweet potatoes are high in vitamin B6 which helpes degenerate diseases and prevent heart attacks; they are also a great source of vitamin C & D. Sweet potatoes contain iron to maintain a healthy immune system and a great carbohydrate alternative because they do not cause blood sugar spikes.

The spices in the harissa blend are super warming to the body. They promote easy digestion and protect the spleen. Pairing these spices with chickpeas give your body the fiber and protein it needs to feel satisfied, making this an extremely comforting and nutritious meal.

You will need: (serves three)

2 medium havana sweet potatoes sliced 1/2 inch thick longwise

1 1/2 cup frozen chickpeas (defrosted)

2 tsp harissa seasoning

1/4 cup halved/quartered cherry tomatoes

1/4 cup chopped parsley

1/2 lemon juiced

1 tbsp olive oil

Garlic sauce

1/4 cup tahini

1/2 lemon juiced

3 minced garlic cloves

1/8-1/4 cup unsweetened almond milk

1/2 tsp pink himalayan salt

cracked black pepper

To make:

1. Preheat oven to 350 degrees. Line a baking sheet with parchment paper. Lay sweet potatoes beside each other and coat with olive oil lightly. Sprinkle salt and pepper to taste. Line a second baking sheet with parchment paper. Toss chickpeas in harissa seasoning and 1 tsp olive oil to coat evenly. Bake sweet potatoes and chickpeas for 35 minutes. The sweet potatoes with soften and the chickpeas will crisp.

2. Meanwhile, make your sauce. Combine all ingredients besides almond milk until smooth. Add in almond milk a little at a time until desired consistency is reached stirring to even.
