Heart Healthy Roasted Vegetable Pasta
This heart healthy roasted veggie pasta can be made in under 30 minutes.
Lets be honest, whats more comforting after a long work week than a big bowl of delicious pasta.
This recipe uses chickpea pasta which is full of protein and fiber.
Just one serving has 13 grams of fiber & 25 grams of protein!
After working an 8 hour shift sometimes I don’t always feel like cooking, which is why this Roasted Vegetable Pasta dish is perfect.
It’s light enough where you do not feel slumped eating late & put together in under 30 minutes.
Here’s how its done…
You will need:
Handful broccoli florets
3 cloves garlic sliced
Onion sliced
Handful cherry tomatoes, halved
pink himalayan salt & pepper to taste
Chickpea pasta (I use EatBanza)
1 tbsp olive oil
1 tsp lemon juice
1 tsp dried oregano
Fresh parsley to taste
Optional: Cashew Parmesan for some cheesiness
To make:
1. I preheat the oven to 350.
2. Line a baking sheet with parchment paper and toss on top some broccoli florets + sliced garlic + sliced onion + halved cherry tomatoes. Sprinkle on some black pepper and pink salt. Roast 15 minutes.
3. Meanwhile, boil water over the stove. When the water has boiled add the chickpea pasta & that simmers for 7 minutes, or according to directions on the box. When pasta is done reserve 1 tbsp pasta water, strain pasta.
4. Toss pasta in olive oil, lemon juice, dried oregano, & fresh parsley. By this time veggies are done & toss them in with the pasta.
5. Sprinkle with some cashew Parmesan for cheesiness
(Cashew Parmesan can be made by blending cashews in a high speed blender, yes thats it!)
