Grain-free Ginger Bread Cookies!
Its that time of the year again when everyone is craving baked goods and sweet desserts. This recipe allows you to enjoy a classic favorite without the guilt. Butter is replaced for Ghee and your typical flour is replaced for almond flour.
These gingerbread cookies are perfect to make with the kids. Bring them to your next holiday party and your family will never know the difference.
Cookies
8 tablespoons ghee room temp
4 tablespoons maple syrup
2 cups almond or hazelnut flour
1 teaspoon cinnamon
1 teaspoon ground ginger
1/4 teaspoon ground cloves
1/2 teaspoon nutmeg
Optional Icing: 2 Tbsp kite hill plain cream cheese + 1 tsp maple syrup + 1 tsp cinnamon
Preheat oven to 350.
Mix wet then dry then wet into dry and refrigerate dough to form for 30 minutes (don’t skip this step or your gingerbread men will get a lot bigger).
Roll out with a rolling pin to about 1/4 to 1/2 inch thick.
use cookie cutters to make gingerbread, re-roll dough, and continue to make more until dough is gone & bake 12-15 minutes.
Let cool then add icing!
