Fig, Pistachio, & Roasted Brussels Salad

Nothing is more satisfying that a big green salad loaded with nutrient dense foods. I love adding roasted vegetables to salads, it brings a warmth to them making them super comforting & filling.

 

You will need:

1 handful brussel sprouts, halved

1 small chopped sweet potato, chopped

olive oil spray

3 tuscan figs, sliced

2 handfuls salad greens, like spring mix, spinach, or baby kale

1/4 cup pistachios

1 tbsp olive oil

2 tsp balsamic vinegar

crushed red pepper flakes to taste

pink himalayan salt & pepper to taste

 

To make:

1. Preheat oven to 350 degrees & line a baking sheet with parchment paper.

2. Toss brussel sprouts in 1 tsp balsamic vinegar, sprinkle pink salt & pepper, and add to one side of a baking sheet.

3. On the other side, add chopped sweet potato & spray with olive oil spray lightly.

4. Roast vegetables for 30 minutes.

5. Once vegetables are about done toss salad greens in olive oil, balsamic vinegar, & crushed pepper flakes.

6. Then, top the greens with roasted Brussels, sweet potatoes, figs, and pistachios.

The roasted vegetables make this salad so warm and comforting.
