Easy Homemade Tomato Sauce
Making a homemade pasta sauce is easier than you think, and you don’t need canned tomatoes and processed ingredients to do so. Cooking can be intimidating and it’s easy to gravitate towards the “easier” option but canned or jar sauces can be high in sodium and full of unnecessary ingredients.

Makes many servings, can freeze for later use
You will need:
2 tbsp olive oil
1 onion minced
1 bulb garlic chopped
3-4 large handfuls of cherry tomatoes
2 large plum tomatoes
1 cup crushed tomatoes
1 pinch of coconut or maple sugar
3 tbsp Italian seasoning
2 handfuls of fresh herbs
salt and pepper to taste
1 tbsp red pepper flakes
To make:
Heat a large saucepan with 2 tbsp olive oil
Add onions and cook until translucent
Add garlic and cherry tomatoes and plum tomatoes
Turn heat to medium-low and cover, opening up and stirring frequently
In about 5-10 minutes the tomatoes will start to pop open
Once the tomatoes begin to pop open mash them with a fork or use an immersion blender
(I personally like the sauce chunky so I use a spoon)
Add herbs, Italian seasoning, salt and pepper to taste, red pepper flakes, and a pinch of sugar
Simmer and serve over pasta
Optional: Add mushrooms to the pop and simmer for a few minutes more
