Crockpot Minestrone

This soup was super simple to make. I start it early morning in the crock pot and its ready to eat in the afternoon. Sometimes I even let it sit a few hours longer until dinner. The best part of the crock pot is that it will not over cook. Each and every ingredient in this soup is medicinally healing to the body. Whole Foods, real ingredients, & anti-inflammatory properties.

You will need:

1 red onion, diced.
1 cup tomato pure
1 tbsp tomato paste
2 cups chickpeas or cannellini beans rinsed and drained
2 cups thinly sliced green cabbage
6 cloves garlic chopped
1 cup carrots chopped
1 cup celery chopped
1 tsp crushed red pepper flakes
Pink salt and pepper to taste

To make:

Simply add all ingredients to your crock pot & fill to about 3/4 full with filtered water.

Let simmer for atleast 4 hours, or up to 8.
