Chocolate Chip Cookie Bars

With the holidays near, there are tons of cookie recipes out there screaming our names! These cookie bars are a fun twist to take on the traditional holiday cookie. Made with wholesome ingredients this recipe is vegan, gluten-free, and delicious too. 

Bring out the decorations, decorate the tree, and bake a batch of these with your family.

The house will smell delicious!

You will need:

1 flax egg

1/4 cup melted coconut oil

1 cup almond or millet flour

1 tsp baking powder

pinch of pink Himalayan salt

1/2 cup chunky @woodstockfoods peanut butter

2/3 cup coconut sugar

1 tsp vanilla extract

2/3 cup your favorite dark chocolate chips

Start by preparing a flax egg, you can use a chia egg too.

Then combine the wet ingredients into a bowl & the dry ingredients in another bowl.

Once both bowls have combined ingredients add the dry to the wet and mix well.

Lastly, mix in the chocolate chips.

Use your spoon at first but don’t be afraid to get in there with your hands so the batter is distributed evenly.

Cover a baking pan with parchment paper and either roll out dough to make bars  or shape into tiny cookies.

Lastly, bake at 350 for 12-15 minutes. Check bars to see if they are ready by sticking a toothpick into the center. If the toothpick comes out clean its done and time to cool until ready to eat! If the toothpick does not come out clean, adjust the cooking time a few more minutes and repeat.
